This plot of Vaillons has a surface of 0,55 Ha (1,35 acres) and is situated on the left bank of the Serein River, on the territory of Chablis town. This plot is a Monopole, meaning there is one owner for this plot.

Grapes: 100% Chardonnay

Soil: Clay-rich limestone soil on the Kimmeridgian strata of the upper Jurassic. The vines are on mild slopes (10 to 15%) exposed South-East. (It is thought that these soils, also found in Sancerre and parts of Champagne, as well as aspect/sun exposure, are responsible for the best quality grapes).  

Alcohol: 12.5 % VOL

Wine making:  Manual harvest, pneumatic press, then vinification 100% in thermo-regulated stainless steel vats. 10 months on lees followed by bottling.

Our Tasting notes:  Very pretty green-gold colour. The nose is very lively with white stone fruit notes and lemon, honey and herbal aromas. Minerally in mouth, energetic and well balanced.

Serving suggestions: Serve at 12°C. Ideal partners for sea food and white meats (the producer says match with escargots! If you like!)

Cellaring potential: Enjoy now or keep for 5 to 7 years.
